I kind of feel like I’m insulting your intelligence with this recipe, but it’s just too simple and delicious not to share. I served these to a couple of friends over the break before indulging in some trashy television watching, and the combination of graham crackers, whipped cream and Catfish was spot on.

I’m providing a single serving recipe for you, but feel free to get an assembly line going and make slender ice cream sandwiches for days.

Slender Ice Cream Sandwiches
Calories: 90 | Fat: 1.4 g (Sat Fat: 0.2 g) | Carbohydrate: 16.8 g | Fiber: 0.4 g| Protein: 1.0 g

ingredients:
1 rectangular graham cracker, split into two squares
1/4 C Cool Whip Lite, slightly thawed
optional: 1 T cocoa powder, sprinkles

directions:
1. If you’re going for the chocolate option, begin by stirring the cocoa powder into the Cool Whip. You might need to put it back in the freezer for a bit to let it harden up again before spreading on to the graham cracker.
2. Spread the slightly softened Cool Whip on to one graham cracker square. Top with remaining square.
3. Wrap the sandwich in plastic wrap and re-freeze for at least an hour.
